Classification: Fiano I.G.P. Salento. Grapes: Fiano 100%. Production area: Cellino San Marco (BR). Training system: Sapling (5.000 plants per ha). Harvest period: third ten days of August, first ten days of September. Vinification: soft pressing, static decantation at low temperature; then fermentation begins with selected yeasts, in steel tanks and at a controlled temperature. Refinement: in steel tanks until bottling.
