Classification: I.G.P. Red Salento. Grapes: Negroamaro (50%), Primitivo (50%). Production area: Cellino San Marco (BR). Training system: Sapling and espalier (3.800/4.500 vines per ha). Harvest period: second ten days of September. Vinification: after pressing and destemming, 8 days of rest on the skins follow; drawing off and aging for 14 months in oak barriques. Aging: stainless steel – barriques.
