Far from traditional, smooth or “old-fashioned” recipes, which go off on the nose, mustard seeds are marinated and stewed in a sweet cider vinegar infused with spices or aromatics, “pickles” style. The result: little tangy balls that burst in the mouth and make all the difference in a salad, roasted vegetables, grilled meat, carpaccio... It’s the caviar of condiments. Mustard from the Burgundy region is an important signature of French gastronomy. However, 85% of the seeds used to make mustard in France are imported from Canada. The mustard seeds used in our pickles are grown in France by our partner farmers.
