To work with Zinfandel, you must use the Goldilocks principle: if you pick it too early, you get a wine that is too young (green in taste); if you pick it too late, you risk fermentation stagnation. Picked at the right time, what do you think? Zindanfel tends to have more acidity than other grapes at the same sugar level, requiring them to be allowed to ripen more than usual. Therefore, we rarely see alcohols below 15 proof (some of ours are much higher). Sourced from original vineyards, such as Monte Rosso, Bismark, Korte and Frei Ranch, the wine embodies the philosophy of 8 Years in the Desert: a full-bodied, full-bodied Zinfandel with nuances and complexity of Syrah, Petite Sirah and Grenache.
