TERROIR Region: Mâconnais Grape variety: Chardonnay – Vines 50 years old on average Vineyard: clay-limestone soils – South-West exposure on the hillsides VINIFICATION AND MATURING Traditional vinification: gentle pressing, settling, fermentation. ERaising on fine lees in a temperature-controlled stainless steel vat for around a year. TASTING NOTES Bright yellow color with golden highlights. Its nose, intense and delicate, reveals a lovely bouquet combining aromas of exotic fruits (mango, pineapple) and dried fruits (hazelnut, almond). Its attack is dense, balanced by a natural minerality. The palate offers notes of citrus and refreshing white fruits. FOOD AND WINE PAIRING Serve at 10°C as an aperitif with cheese gougères and grilled prawns. It will go wonderfully with roast veal with green vegetables, or white fish in ravigote sauce.
