This is what gives them that delicious caramelized brown color. Like a layer of caramel on the outside, they are crispy at the first bite, then melting while maintaining a firm texture on the inside. The aromas of rum unfold with great finesse on the palate and blend perfectly with the notes of caramel. History The first trace we have of canelés is their production by Bordeaux nuns. Tasted at the court of Louis XIII, they were swept away by the revolution and would only be brought up to date in the 20th century.
