Pierre 2023, BEAU CONSTANTIA, round and mineral white wine

This round and mineral white wine is made with the absolute intention of preserving the characteristics of the Beau Constantia terroir, made up of sloping vineyards, tempered by the Atlantic Ocean and the Indian Ocean. 
This terroir is located in the Constantia Valley, the oldest wine-producing region in the southern hemisphere (1685).
 Vinification and aging: Pierre is produced by pre-fermentation maceration for 18 hours, and co-fermented in a clay amphora and in an old French oak Demi-Muid barrel. 
This is followed by aging on raw lees for 8 months. 
We thus obtain a wine with deep minerality and a fine tannic structure.
 Tasting notes: – Appearance: Intense straw yellow color. –Nose: Very subtle aromas of apricot, blackcurrant and flowers, with mineral notes. –Palate: Its deep minerality adds flesh to the nervous acidity of high altitude Sauvignon Blanc and its fine tannic structure. 
On the palate it is balanced, round with a touch of salinity.
 Aging potential: 3-4 years Recommended serving temperature: 10-12°C Food/wine pairing: Green curry pad thai, coconut-curry chicken, spring rolls, shrimp.
