Cecily 2023, BEAU CONSTANTIA, lively and aromatic white wine

This lively and mineral white wine is made with the absolute intention of preserving the characteristics of the Beau Constantia terroir, made up of sloping vineyards, tempered by the Atlantic Ocean and the Indian Ocean. 
This terroir is located in the Constantia Valley, the oldest wine-producing region in the southern hemisphere (1685).
 Vinification and aging: In order to preserve the unique characteristics of the terroir, 30% of the blend is fermented and aged in concrete eggs and the remaining 70% in older 225 L French oak barrels. 
Once fermentation is complete, the wine is aged on raw lees for 7 months without stirring. 
We thus obtain a perfectly balanced wine with beautiful acidity and a mind-boggling floral and fruity concentration.
 Tasting notes: – Appearance: Golden yellow color. –Nose: Aromas of white peach, candied mandarin, supported by subtle notes of orange blossom, jasmine flower and mascarpone. –Palate: Unusual balance between waxy weight and bright acidity, perfectly maintained by the touch of salinity characteristic of the Beau Constantia terroir.
