The use of edible flowers in confectionery boasts a centuries-old tradition in Europe. Mill & Mortar has decided to reintroduce these specialties with delicious crystallized violets, thanks to the expert knowledge of a producer from Toulouse who has crystallized these delights since 1818. The violet petals are collected at the peak of their flowering, and are then crystallized using a refined technique that uses sugar spray. Excellent for decorating cakes and pralines, they are also delicious to eat individually as sugars.
