HERBE FOLLE AOP GAILLAC WINES

AOP Gaillac Red: Purple color with violet reflections, the first nose is carried by ripe black fruits, rich and delicious.   The second nose takes us with peppery notes on the finish.   The attack is silky then we notice a lively and well-blended structure.   This keeps for up to 5 years, goes very well with a porcini mushroom risotto or a hard cheese platter.   Rosé: Intense color with garnet reflections, notes of wild strawberries mingle with scents of roses and lavender.   A nice balance between fruity and lively.   The aromas of delicious and crunchy redcurrants are found with those of flat peaches and morello cherries carried by a tangy finish.   Keeps up to 2 years to maintain optimal freshness, definitely a rosé to serve with a meal, with a pissaladière, grilled red mullet fillets or for those with a sweet tooth, with a raspberry dessert.   Dry white: Pale yellow color with gold reflections, the first nose is fresh, mixing notes of white flowers and citrus.   The second nose reveals all its minerality.   The attack is fresh and elegant, with Williams pear blending with lemony notes.   The structure is round but with a nice tension, and a certain liveliness which gives it good persistence in the mouth.   Keeps up to 5 years.   It will go wonderfully with poultry in forest sauce or a fisherman's stew.   Soft White: A fairly heavy, golden yellow color.   The first nose is a basket of candied fruits, we can recognize: quince, pear, apricot and even citrus peel.   The second nose opens with warmer aromas of nuts.   In the mouth we find ourselves with a dense but fluid structure, the fruity and finely toasted flavors intertwine in an enveloping way, testimony to the fairly significant sugar residue.   In general, the sip denotes a peaceful balance of freshness and sugar, which invites a toast.   Goes very well with, for example, a salad with walnuts and fourme d'Ambert, apple crisp.
