Red Wine - Fulcrand Cabanon AOP Languedoc Cabrières

Velvety, fruity wine, typical of the terroir. Œil: Brilliant wine with a beautiful deep red color with purple reflections, a sign of very thorough extraction.
 Nose: Very clear. 
Intense fruitiness dominated by a combination of red fruits (blackcurrant, redcurrant, strawberry, morello cherry). 
Evolves into black fruits and spices.
 Mouth: The attack is very supple, the well-coated tannins leave a very pleasant impression of volume and fullness. 
The aromas of black fruits and licorice persist on the palate with well-blended tannins. 
Very beautiful expression of the Cabrières terroir, one of the jewels of our cellar.
 Terroir: Dominant shale soils.
 Grape variety: majority Syrah, Grenache Vinification: Harvest destemmed, long vatting 4 weeks of maceration.
 Aging: Stainless steel tank Storage: Good to drink today but suitable for aging for 2 to 3 years in a good cellar.
 Vineyards: Average altitude 120 meters. 
Selection of Syrah and Grenache plots based on soil quality, exposure and maturity.
 Serving temperature: 14 to 16°C.    Food & wine pairing: Accompanies both classic dishes of red meat and cheese but also dishes with contrasting flavors, sweet - savory for example or land - sea.
 Pierre Dionis, famous doctor and anatomist, surgeon in title to Queen Marie-Thérèse, describes the arrival in Versailles of the Prior of Cabrières: "The Prior of Cabrières was a very charitable man who distributed many remedies in his province... The great reputation that he had acquired made people wish to see him at Court, he arrived there in the 1680s” Indeed, Fulcrand Cabanon made a wine with surprising therapeutic effects, which served as a remedy and a fortifier for the people of the Court. 
Louis XIV adopted it without delay.
