Red Wine - Château de Cabrières AOP Languedoc Cabrières

Château Cabrières is a powerful and elegant red, very flattering, with vanilla and liquorice aromas.
 View: Intense garnet color.
 Nose: Pleasant and complex bouquet where woody, lightly roasted scents mingle with aromas of red fruits and liquorice.
 Mouth: The attack is clear, the still firm tannins of the wine are softened by the silky and coated tannins of the wood. 
The aromas of cherry and blackcurrant are very present. 
The licorice taste reinforces the overall impression of freshness.
 Terroir: Schist terraces which border the ruins of the Château de Cabrières.
 Grape variety: 85% Syrah, 15% Grenache.
 Vinification: Harvest destemmed, long vatting (21 days).
 Aging: In oak barrels for 12 months.
 Bottling: Within the year following release from the barrels.
 Conservation: 3 years after harvest are necessary before Château Cabrières begins to reveal its riches. 
In a good cellar, aging for 5 years is recommended.
 Gastronomy: This is the perfect wine to accompany big game, red meats with wine sauces.
 Very old documents testify to the wine-growing vocation of the lands exploited near the Castle occupied by the descendants of the Franks (Family of the Duke of Guilhem) until the 12th century before they were dispossessed of their property by the Albigensians. 
The Château de Cabrières was dismantled in the 16th century following the unrest caused by the wars of religion.
