Red Wine - L’Estabel AOP Languedoc

Red wine pleasant to drink, light and fruity, perfect for all occasions. Œit: Ruby red color of good intensity.
 Nose: Aroma of red fruits and sweet spices.
 Mouth: Full, fleshy, with well-blended tannins, fruity mouthfeel, pleasant finish. 
The whole is fresh and balanced.
 Terroir: Shale and travertine hillsides.
 Grape variety: Carignan 10%, Grenache 55%, Syrah 35% Vinification: Destemmed harvest, traditional vinification with temperature control.
 Aging: In lined concrete vats Serving temperature: 14° to 16°.    Food & wine pairing: Oven roasted chicken Vegetarian touch: Homemade vegetarian pizza with summer vegetables and mozzarella balls. Over the last million years, this source has given rise to a massif of tuffs one kilometer long and 300 meters wide. 
It dominates by around thirty meters the Boyne, a tributary of the right bank of the Hérault which crosses Cabrières from north to south. 
Nowadays, this flow is channeled, the Estabel plateau is therefore no longer subject to flooding.   On either side of this canal, the vineyard, covering around fifteen hectares, facing the Pic de Vissou, is located on very differentiated soils. 
The choice of rootstocks and grape varieties is made according to the nature of the soil. 
Thus, Clairette behaves better on very limestone soils (Lieu-dit Les Tabels) while the other grape varieties: Cinsault, Carignan, Grenache and Syrah prefer schist soils, the most widespread in Cabrières (Lieu- says Les Moularesses) Estabel has been a registered trademark since 1952, often associated with vermeil wine (bright red) which traditionally defined the color, but also the quality of wines from the 12th century. 
The first bottles of rosé wines marketed by Vignerons de Cabrières in the 1950s bore the mention: L’Estabel Vin Vermeil. 
Since then, this tradition of quality has been perpetuated in the three colors of Estabel: L’Estabel blanc, L’Estabel rosé, L’Estabel rouge.
