It is an amber to very dark colored honey, with a warm, malty, caramelized flavor. The bees forage from May for the spring honeydew and until September for the Metcalfa honeydew. To produce it, the bees do not forage on the flowers but collect the sweet exudate left by biting sucking insects on the branches of the trees. Spring honeydews are harvested mainly from: cistus, oaks, myrtles and can crystallize. Summer honeydew (metcalfa honeydew) is more viscous and does not crystallize.
