Stone ground by the producer. A high protein wheat grown in Italy, in Umbria, by Torre Colombaia. Compared to common wheat, Khorasan has a higher protein (17% compared to 12% for normal wheat) and lipid (2.6% compared to 1.9%) content. It also shows higher values for 8 of the 9 minerals and much higher values (34% to 65% more) for certain essential amino acids (threonine, cysteine, arginine, histidine, aspartic acid and serine).
