In this selection, the varieties are traditional, they are interesting because they gradually adapt to the specific contexts of the agricultural operation and the microclimatic context, which gives wheat adapted to the altitude and perfect in particular for bread-making. •A recipe co-constructed in a local approach. The recipe for our flax breadsticks was developed jointly with our partner. Together we chose ingredients produced in Italy, such as flax and even on a regional scale, especially for key ingredients like wheat and olive oil where we looked for an olive farm and a mill anchored in their territories.
