Very interesting vegan alternative solution to ground meat for Bolognese sauce, gratins etc... 

Excellent source of protein and fiber.   Before use, soak in hot water then squeeze. Soy contains vitamin E, necessary for the body as a protector of cellular tissues, and B group vitamins (B1, B6, B9 and biotin) used in particular for assimilation of the different macronutrients (proteins, lipids, carbohydrates) that make up the cell wall of plants, and which contribute to our well-being. As fiber only passes through the digestive tract, it does not provide calories. 

The insoluble fibers of soy help regulate transit and fight against intestinal laziness while that soluble fiber plays a preventive role in cardiovascular diseases.
