
Spelled is the ancestor of wheat, as it was once consumed by the Gauls and of which we find traces dating back eleven thousand years ago. It is a cereal that does not require any fertilizer, requires very little water and is very nutritionally rich. Rich in vitamins and minerals, semi-wholemeal spelled flour produces bread that does not crumble. RECIPE: Almond cakes: whisk 6 whole eggs with 200ml of milk, 200g of melted butter, 150g of almond powder, 1 sachet of yeast, 1 sachet of vanilla sugar, 220g of brown sugar, 130g of brown flour, 80g of flour of rice and the zest of a lemon. Mix well, pour into small buttered molds and sprinkle with flaked almonds. Cook for 20 minutes at 200°.
