spelled flour 65% (T65) of Demeter quality Replaces wheat flour advantageously because it contains less gluten, is used in the same way. Pie dough or turnovers: 250g spelled flour, 50ml olive oil, salt, 1 egg, 25ml water. Knead together, leave for 10 minutes and roll out the dough. Use for tart bases: line the mold and pre-bake for 10 minutes at 180°.
