The umeboshi plum is a Japanese apricot fermented in a salty liquid, enriched with shiso leaves (a kind of nettle). It has long been a part of Japanese cuisine and folk medicine. It is an excellent health food considered to regulate digestion. The umeboshi plum has a high content of iron, calcium and phosphorus, as well as citric acid. Its sour and salty flavor goes well with many foods and can replace salt and vinegar. Umeboshi paste is used as a condiment or sauce base. Due to their high salt content, they can be stored for a long time without spoiling.
