Umesake no kyo is a unique drink, made from the maceration of a variety of Japanese fruit and sake made in the purest of traditions. Only its perfect balance in the mouth can compare with its formidable power. Ume (pronounced “oumé”) is a fruit from Japanese apricot trees. Often confused with plum, it is very popular in Japan. Among the different varieties of this fruit, “No-kyo” represents excellence. Here, the “No-kyo” macerate for between 24 and 36 months in a traditional sake vat, giving it an exceptional flavor. If the attack is powerfully sweet, it balances wonderfully with the original acidity of the fruit. Added to this composition is an exceptional length in the mouth...
