Exceptional shochu made by distilling sake marc (sake kasu) using a traditional wooden steamer and a bronze still. It is aged for at least 12 years in earthen jars. Very limited production of 600 bottles per year. The nose is complex, on cocoa, oatmeal, steamed rice, grilled almonds. It is full in the mouth, with a nice balance between sweetness and acidity. Well pronounced, umami is round and pleasant. A frank and dry finish. To be enjoyed as a digestif in cognac glasses. Sold in a box
