
An authentic sparkling sake made by double fermentation in the bottle. The nose is very refreshing with notes of aromatic herbs. It then becomes rounder, sweeter with fruity hints accompanied by rice and green pepper. The bubbles are light and foamy in the mouth. The attack has a slight sweetness that continues into the mid-palate. The whole is fresh with a well-crafted bitterness on the finish. There is a straightness brought by the fine bubble but also a roundness coming from the fruity aroma. A gourmet sake that will enhance dishes thanks to its short finish that leaves the palate salivating. Best enjoyed chilled (8°C), like champagne, in a flute.
