
A sake produced with rice grown using the Aigamo method: ducks are raised in the rice fields so that they eat harmful insects, thus reducing the use of chemicals. The nose is simple and effective. A sweet side is present with a little rice pudding, then notes of cereals like wheat emerge, as well as yellow stone fruits and fresh coffee beans. The aromatic profile evolves with temperatures. HAS The attack, there is a beautiful freshness that encompasses the mouth. An acidity emerges and gradually gives way to a salinity in the mid-palate, which continues and gains momentum in the finish. The aroma is very discreet with water fruits and cereals like rice. This salinity is surprising and gives substance to this discreet sake. The finish is short, allowing the gastronomic pairings to fully express themselves. HAS Enjoy in a wine glass, at room temperature (18°C), or in an ochoko (traditional straight glass), warm (30°C) and hot (45°C).
