II KAZE HANA Japanese sake Junmai Ginjo

A Junmai Ginjo brewed from the locally grown, hardy, ancient Omachi rice variety. The nose is captivating and expressive, reminiscent of primary aromas of very young wine aged in vats, accompanied by fruity notes and a hint of hazelnut shell. The palate is fresh, engaging and complex, with a well-organized combination of acidity and alcohol, enhanced by beautiful salivating bitters in the mid-palate that evoke white pepper. The attack is aromatic with notes of green grape, lime and apple, followed by a pear and almond side. Umami is really detectable quickly. The short finish is harmonious and balanced, with floral and rice pudding notes. HAS Enjoy in a wine glass, chilled (12°C) or at room temperature (18°C). Pairing ideas: Sushi, sashimi, marinated bluefin tuna, baked cauliflower, Japanese chawanmushi flan, shrimp and lemongrass dumplings.
