
Product of French biodynamic agriculture. It is typically the legume of the Mediterranean Basin. Due to its exceptional richness in plant proteins, chickpea is an essential element of vegetarian cuisine. It is also very rich in fiber and resistant starch, which are beneficial for intestinal health. Like all legumes, chickpeas contain minerals and trace elements (manganese, copper, phosphorus, iron and zinc). Wash 250g of chickpeas, soak them in cold water overnight, with 1 leaf of Kombu seaweed. Drain everything, pour 3x their volume of cold water and bring to the boil, the Kombu seaweed cut into pieces and 2 bay leaves. Cover and cook over low heat for 2 hours. Salt at the end of cooking and add olive oil and chopped parsley.
