Gluten powder is added to the dough to make it more elastic and obtain a more airy bread. It is mainly used to make seitan. RECIPE: Seitan "express": put in a bowl a little water with a drizzle of olive oil and a little tamari. Pour in the gluten powder and mix with a whisk until a very thick and consistent paste is formed. Put this dough in a mold and steam for 1h30. Cut into slices or chunks and cook in a pan or in a stew.
