We are a hyperlocal and sustainable brewery producing handcrafted vinegar in the Orkney Islands, Scotland. Our vinegar can be found anywhere from small farm shops to top Michelin star restaurants and high-end department stores.
Orkney Craft Vinegar is raw, unpasteurised, unfiltered, living vinegar with the mother. It’s made from scratch using traditional methods and aged in Highland Park Whisky barrels for up to a year. The result is a softer, more rounded ingredient to cook with which carries more depth of flavour than standard vinegar.
Vinegar is a secret weapon in the kitchen – it lifts and balances flavours whether in dishes or in drinks and comes with a host of health benefits. Vinegar seasons food as you do with salt, and elevates flavours via acidity as you may with citrus fruits.
