After an initial maturation in stainless steel barrels, our Gaya Jequitiba-MG blend is transferred to barrels of Jequitiba Rose (Cariniana Legalis) in order to accentuate the esterification of its aromatic palette while reinforcing its natural color. The absence of a filtration process preserves the aromas of fresh cane juice and white flowers. The gentle distillation with gradual heating in a small copper still allows the tradition to be perpetuated and a cachaça to be produced in micro-batches rich in aromas. 39% ac/vol
