During the brewing process we cannot bottle all the beer otherwise there will be a large deposit in the bottle. We therefore recover these materials to distill them. The distillation is carried out in a vase still, the still which was traditionally used by Burgundian winegrowers to distill the marc. We then age this alcohol for 3 years in a barrel to obtain this aged brandy. Distillation in a vase still gives it the fruitiness and floralness that often marks the marc bourguignon, the 3 years in barrel gives it color and roundness, and reinforces its fruity side. HAStaste like a whisky: neat, or by adding a few drops of water if you prefer slightly less alcoholic, or even with ice cubes for those who prefer it cooler!
