The time has finally come to reveal the apotheosis of the Bulle de Ruche brand's work in transforming honey into high-end drinks: Eau-de-Vie de Miel. This single-flower honey Eau-de-Vie is produced by fermenting and then distilling lavender honey from Provence harvested by Miellerie Martine and lime honey from Picardy harvested by the Fourneaux family in the Halatte forest. It is the result of a meticulous development process: - Slow fermentation at 18°C of honeys into meads; respectively at 4.5% alc. for lavender mead and 9% alc. for lime mead. Followed by 6 months of individual care. -Distillation in a Stupfler ® still at the Faronville distillery in Beauce. -Aged for 2 years in new French oak barrels for the Linden Honey Eau-de-Vie, 3 years in ex-Bourbon barrels for the Lavender Honey Eau-de-Vie. -Blending of the 2 Eaux-de-Vie in February 2024 and storage under glass until August 2024. This vintage is therefore made 100% from honey, no flavoring has been added during the process. It takes approximately 1.5 kg of lime and lavender honey to produce a 70cl bottle of Eau-de-vie L'AMAZONE. The label is a limited reproduction of a unique 160*130cm artwork by the painter Sepand Danesh and sold for €15,000. The 536 bottles are numbered by hand. A certificate of authenticity is given by Sepand Danesh to each buyer. It is therefore a collector's item, a decoration but also a speculative one if you keep the bottle closed for a few years, because the notoriety of Sepand Danesh continues to grow. Tasting notes: - Profile: Woody, sweet. -Color: Pale gold. -Nose: Beehive, honeyed, woody, floral. The first nose is marked by light vanilla aromas: still warm meringue, barely toasted almonds and crème brûlée. The woody side has a particular depth on aromas of honey: honey, beeswax, pastry and sweet spices: cloves, caraway, apple and cinnamon crumble. When aerated, the aromatic palette leaves more room for delicate floral aromas: violet and elderberry, yellow lime blossoms and aged meads: fig leaves, dates. -Palate: Soft, sweet spices. A silky, soft, almost sugary attack; the cursor is clearly on the honey and its floral complexity: potpourri, bramble flowers, buttery lavender honey. Then comes the nougat side of the honey, its association with the wood giving a framework to the sweet spices perceived on the nose, notably cinnamon, caraway, and accents of young nuts slightly tending towards balsamic notes. -Finale: Persistent. -On crème brûlée, gingerbread and lightly smoked honeycomb. Dry spices of ginger, cardamom, fig leaf and bitter orange are also perceived. On the length, bitters emerge that recall old dry meads. Tasting advice: To be enjoyed with a dessert or as a digestif.
