
It took several years to create this rare spirit of impeccable quality. Each step that led to its realization was carried out with patience and rigor, in the sole quest to pay the most respectful tribute to the work of the bees and our beekeeper. This precious Eau de Vie was made from a mead made exclusively with a blend of three organic honeys from Isère, without transhumance bees and Riesling yeast. The reward for this requirement: an authentic, balanced, elegant and refined brandy, subtly combining roundness and softness in the mouth. How was our Honey Eau de Vie made? This Eau de Vie of honey, an exceptional spirit very rare these days, comes from the fermentation of a mead, or honey wine, made by us from organic acacia honey, organic spring and honey. organic autumn, produced in Isère without transhumance of the bees. Once the blending of honeys was done, we chose Riesling yeast which brings a mineral side and accentuates the floral aspect of our eaux-de-vie. In order to allow the fermentation to extract as many aromas as possible, we let the yeast work for 6 months at low temperature. Once the fermentation was finished, we distilled our mead very slowly in a Stupfler still, so that our brandy expresses the aromatic quintessence of our local honeys.
