DOSAGE: 0.01% – 0.2% FORMAT: 200 g FIELDS OF USE: ice cream parlor and pastry shop. -- DESCRIPTION: Mono and diglycerides of fatty acids (E471), are additives chemically produced from glycerine and acids natural fats. They mainly have an emulsifying function and stabilized, but also antioxidant and gelling agent. Some examples where to find E471 are ice cream, baked goods, bread, gum chews, margarines and chocolate. ICE CREAM: in ice cream they maintain the right overrun and shelf-life. PASTRY: they increase the shelf-life.
