Banana dark chocolate

Dark Chocolate 65% cocoa with banana is a treat for lovers of mixed tastes. The pieces of dried bananas go perfectly with 65% dark chocolate. SolAlter chocolates are made from “Nacional” cocoa beans, classified as “fine and aromatic”. Nacional cocoa develops a delicate chocolate aroma accompanied by a pronounced floral and fruity taste, recognized as the “Arriba” taste. Cultivated by a group of peasants in the tropical forest of Esmeraldas, the cocoa trees are surrounded by a lot of vegetation: lemon trees, coconut trees, banana trees, mango trees, tagüas, balsas… among others. This, in addition to contributing to the protection of the forest, gives a unique aroma to the chocolate made from these beans. The objective of the peasant group is to defend the work of the member peasants through: the sale of their beans at prices that allow them to receive an interesting income for the producers, which allows them to live with dignity from their activity. Improving farmers' agroecological practices. Continuous improvement of the quality of cocoa beans, through monitoring of plots, trees, fruits, post-harvest process (fermentation of beans, drying, etc.). SolAlter is thus part of a process of respect for the work of the peasant. In this group there is no place for big producers. After the beans arrive, they are transformed into couverture by an artisan chocolate maker in the Drôme. The process is carried out slowly and carefully, in order to obtain the best aromatic notes of this exceptional cocoa. The advantage of working with an artisan is that he takes care of these beans. He adapted his process to obtain a taste with character: that of the Nacional bean! : sweet, without bitterness, fruity, floral… The last stage of the transformation is carried out in our workshop in Ardèche: the development of the tablets. SolAlter chocolates are made without any added flavouring. This is to respect the aroma of the Nacional cocoa.
