Star anise is the fruit of the star anise, a tree from southern China. Its eight-pointed star shape also gives it the name Star Anise. At the time of picking the fruits are green and it is only after drying in the sun that they take on their characteristic brown color. Star anise is used grated or infused to flavor savory dishes or desserts with its sweet, very aniseed and slightly spicy flavors. It is ideal for enhancing fish, vegetables or broths. In pastry, in the west of France, it is used to flavor traditional desserts such as galettes (infused in milk) or gingerbread. Star anise goes well with fruity desserts, especially orange or apple-based. Origin: Vietnam
