
Although its first traces date back to 2,300 BC, freekeh (green wheat) is said to have originated in flames. Legend has it that a fire engulfed an entire city in the eastern Mediterranean, destroying the wheat harvest. In order to avoid famine, the villagers tried to salvage their harvests. By rubbing the burnt shells, they discovered that the result was a seed with a smoky, nutty flavor. They then named it “freekeh”, from the Arabic farik meaning “to rub”. Today, freekeh is a fire-roasted green wheat, available as whole or cracked grains. It makes a filling and nutritious garnish that enhances lamb, fish, poultry or vegetarian dishes. It can even be added to soups or stews to make them heartier. It is also eaten cold, in salads in spring or summer. A product with multiple possibilities for ever more deliciousness!
