Mantua's cuisine boasts a princely ingredient: Pumpkin! Prepared with natural ingredients and plenty of yellow pumpkin, this risotto is a delight for its unmistakably delicate taste. Try it with the addition of one or two tablespoons of herb cheese or gorgonzola, it will be truly unforgettable! Our range is 100% natural and free from: - chemicals, - added sugar, - added fats (except olive oil), - animal derivatives (so they are vegan!) We use just fresh vegetables carefully selected and minimally processed to create meals both authentically Italian and easy-to-prepare. Servings: 2 Cooking time: 16/18 minutes DIRECTIONS: in a non-stick skillet or pot, bring 750ml of water and 2 tablespoons of extra virgin olive oil to a boil. Pour the contents of the packet, cover, and cook over medium heat, stirring occasionally, until the water is almost completely absorbed and the risotto is creamy. Add 1 ladle of boiling water for a less al dente cooking. Season to taste with salt. Let it rest for 5 minutes and add 1 or 2 tablespoons of lukewarm water to amalgamate before serving with melted butter. SUGGESTIONS: add 1/4 glass of white wine to the water. Cook it like a classic risotto, adding water gradually. Garnish with butter and 2 slices of minced smoked salmon. WINE-PAIRING: medium-bodied white wines.
