Long 35-day fermentation under temperature control. Eraising in oak barrels. SERVING TEMPERATURE 15 to 16°C. TASTING NOTES A wine of character and expression with a deep garnet color offering a powerful bouquet of ripe red and black fruit notes interspersed with spicy aromas. On the palate, we find the fruity and complex aromas of the nose, a beautiful structure with silky tannins, suggesting good aging potential of between 5 and 10 years. FOOD AND WINE PAIRING A marvel with leg of lamb, wild boar stew, truffle mousseline, grilled meats, or Bleu des Causses cheese.
