Abandoned for a time, the chia seed had been cultivated for millennia in Aztec lands and constituted the basis of the diet of its peoples. It was not until the 1990s that it was put back on the agenda, for its outstanding virtues which make it an excellent source of proteins, vitamins, minerals, antioxidants, Omega 3 and 6, in much higher proportions than the other seeds.
