
Small spelt is distinguished by its smaller and harder grains, while large spelt has larger grains, wrapped in a protective husk, unlike its small cousin. This flour lends itself wonderfully to the art of baking, cakes and biscuits, infusing them with a delicate touch of nutty flavour. Our French flours are freshly ground on an Astrié mill, a mill which allows us to obtain the best quality flour, as efficiently as possible. With an extraction rate of at least 80% in a single pass, the flour is neither heated nor oxidized. This effectively produces flour of exceptional nutritional finesse, a true reflection of our wheat or cereals.
