COGNA 'ALL'ALBESE

Cögnà all'albese can be improperly defined as a Piedmontese grape mustard, it is an ancient recipe typical of Alba and the Langhe prepared by the housewives of the time to overcome the particular conditions of necessity of the winter season. In fact, the ingredients were traditionally found after the fruit was picked. Then the last bunches of grapes, the apples left to be picked from the trees, as well as the pears and quinces were cooked with walnuts and hazelnuts, other typical fruits of Alba and the Langhe. This sauce was prepared to be tasted in the winter season with polenta, another typical dish of the Piedmontese tradition. It can be tasted not only on bread for a hearty snack, but also on boiled meats. The flavor is enhanced on cheeses and it is certainly one of the best combinations with it. More imaginative but highly effective combinations are with a vanilla ice cream or on a fresh granita.
