
Gaudio, from the Latin gaudium, intense joy, is a red wine produced from a selection of the best Sangiovese grapes with the addition of a touch of Cabernet Sauvignon, from the oldest vineyards of the Carus estate, located between San Casciano and Mercatale in Val di Pesa, one of the most important historical areas of Chianti Classico. ANDa powerful and elegant wine, capable of fully representing the territory in its maximum expression: the Gran Selezione. It is refined in Allier oak tonneaux and then in the bottle for at least 6 months. ANDintense ruby with a nose reminiscent of black berries, cocoa and spices. It has an excellent structure, with powerful and elegant tannins, impeccably balanced and with a long persistence. GRAPE VARIETY - 90% Sangiovese, 10% Cabernet Sauvignon ALCOHOL CONTENT - 14-14.5% TREEING SYSTEM - Spurred cordon and Guyot PRODUCTION - 50 quintals/ha for Sangiovese, 45 quintals/ha for Cabernet Sauvignon TERRITORY AND ALTITUDE - The area is mainly hilly, characterized by medium clay soils, rich in alberese and galestro, respectively, the main responsible for the longevity and elegance of the wines, with a good presence of river pebbles that give the wines a good structure. The different exposure of the vineyards, which are located at an altitude between 190 and 300 meters above sea level, allows for an important organoleptic complexity HARVEST - The harvest is done by hand to maintain the integrity of the product and the quality of the fruit. For the Gran Selezione, Sangiovese is selected that comes from our vineyard at 380 meters above sea level AGEING - The Sangiovese is aged in oak tonneaux, the Cabernet Sauvignon in barriques.
