UWW BALDERO CHIANTI CLASSICO DOCG 2019

Carus embraces innovation with Jamin UnderWaterWines, the first Italian company to pioneer underwater wine cellaring, to present UWW BALDERO CHIANTI CLASSICO DOCG 2019, the first Chianti Classico aged underwater in the sea.​ In a first phase, which began at the end of 2023, the project involved the immersion of 40 bottles of Baldero Chianti Classico DOCG 2019, immersed off the coast of Portofino, which confirmed the validity of the unique and highly sustainable sea refinement process, capable of characterizing its refinement. The process gives the wine a complexity and elegance towards tertiary aromas typical of long maturation which converge in a harmonious tasting complexity. At the beginning of autumn 2024 we immersed 500 bottles that will remain at depth for approximately 12 months. The wine will therefore be available, sea conditions permitting, in autumn 2025. For more information or pre-orders, write to shop@carusvini.it.​ Baldero, produced with pure Sangiovese grapes, coming from vineyards located between San Casciano and Mercatale in Val di Pesa, one of the historic production areas of Chianti Classico, takes its name from “baldanza”, confidence in one's own strength. ANDa wine that fully represents the Chianti Classico territory and Sangiovese, its historic variety, through its typical fruity and floral aromas.​ GRAPE VARIETY - 100% Sangiovese ALCOHOL CONTENT - 13.5-14% TREE SYSTEM - Spurred cordon and Guyot PRODUCTION - 50 quintals/ha TERRITORY AND ALTITUDE - The area is mainly hilly, characterized by medium clay soils, rich in alberese and galestro, respectively, the main responsible for the longevity and elegance of the wines, with a good presence of river pebbles that give the wines a good structure.The different exposure of the vineyards, which are located at an altitude between 190 and 300 meters above sea level, allows for an important organoleptic complexity HARVEST - The harvest is done by hand to maintain the integrity of the product and the quality of the fruit AGEING - Aged 80% in steel and 20% in oak barrels TASTING NOTES - Color: Clear, bright ruby red, consistent Nose: Fresh and fruity with notes of iris and cherry and a light hint of vanilla that marries perfectly with the fruit Palate: Fresh and elegant with well-structured tannins, savoury PAIRINGS - Grilled and stewed meats, Cinta pork tagliata, Tuscan ribollita SERVING TEMPERATURE - 15°
