
Our Mezcal Cristalino is matured for 6 months in American oak barrels and then filtered using activated charcoal. The result is a crystal clear liquid with an elegant blend of aromas and flavors that are refined yet full of the special character of Mezcal. A Unique Process: Step One: Harvest and Cook Our cultivated and mature Espadin Agaves are harvested by reputable local producers in the Tlacolula and Valles Central regions of Oaxaca and are cooked in underground stone ovens before being crushed to extract the sugars. Second step: Fermentation and distillation Depending on the time of year, we ferment the liquid for about ten days before distilling it in copper stills. Step Three: Maturation Our mezcal is matured for approximately 6 months in charred American oak barrels, allowing us to balance the subtle notes of vanilla, cedar, honey and dried fruits from maturation, with the light smokiness given off by the cooked agave. Step Four: Filtration Our mature mezcal is filtered using activated carbon to extract the color and enhance the flavors. The result is an elegant blend of aromas and tastes that are both unique and distinct, while capturing the characteristic character of mezcal. Taste & Aromas: Primary notes of green agave, citrus (orange and lemon peel), florals and light smoke are complemented by subtle notes of vanilla, cedar, honey and dried fruits. The finish is sweet and lingering, balanced by the taste of cooked agave, cloves and cocoa.
