At Conservas Medrano we take tuna from the north very seriously. We select the pieces of fresh tuna in the best fish markets in the Basque Country and we prepare the fresh tuna preserves in less than 24 hours from its collection. Bonito in oil is considered a delicacy with recognized international prestige. This fish, also known in some places as albacore tuna, can measure almost a meter and a half and weigh up to 60kgs. At the end of spring is when it is located in the waters of the Cantabrian Sea, fishing is done with a hook to try to make the fish suffer as little as possible and get a higher quality meat.
