The Northern Bonito (Thunnus alalunga) is caught in the Cantabrian Sea between the months of June and October with selective fishing gear, one by one, with hook. It is characterized by its white and tender flesh, smooth flavor and juicy texture, making it the favorite preserve of the most exquisite palates. It is canned and covered with a mild pickle sauce. The processing, handling and obtaining of the final product are carried out in compliance with current hygiene and health standards throughout the process, as well as good handling practices.
