The sardine or xoubiña is fished at different times of the year, being those of the month of September, the best quality. They are steamed and carefully introduced into the tin by hand. There they are impregnated with the mild flavor and aroma of olive oil. With the passage of time, the sardines become even tastier. Once caught, they are immediately freshly prepared by hand, roasted as it was done in the old days, giving them the desired texture and finally lovingly packaged.
