Sardine fishing is inshore fishing, that is, it is one that is carried out in waters close to the coast. The pilchardus sardine is caught in the Atlantic sea with traditional and sustainable gear, always choosing the ideal time of day and the ideal time in which it has more fat, which ensures its juicy texture and exceptional flavor. During its preparation, the sardines are cleaned manually, removing the head, tail and the rest of the viscera that remain in the abdomen. This is done with great care so as not to tear the belly or the skin. Then, they are washed in brine and grilled one by one to toast them as it was done in the old days, giving them the desired texture. Immediately afterwards, they are introduced into the container with their olive oil covering liquid (85% refined and 15% virgin). These preserves are always packed manually selecting them by their size. Once packaged, if the sardines are stored in a dry environment at room temperature, they will keep for 6 years. For consumption, we recommend tasting them with fresh tomato or salted butter and with some thin slices of onion on toast.
