Green flageolets are collected by the Corab organic producers' cooperative in the following departments: Charente (16), Charente-Maritime (17), Deux-Sèvres (79), Vienne (86), Haute-Vienne (87) and Dordogne ( 24). They are offered in bulk (5 kilograms). Green beans are excellent sources of protein, iron and dietary fibre. They are enjoyed with meat or fish and vegetables to obtain a balanced meal. Preparation tips: soak the flageolets in cold water for about ten hours, then cook them in plenty of simmering water for about an hour until the flageolets are tender.
