Tasting sheet VINIFICATION The “Sobremadre” elaboration basically consists of fermenting the white grape must with part of the skins (25%) of the Tempranillo variety, the rest being virgin must. Once the fermentation is finished, it is not racked and macerates with its lees and these skins for about six months (depending on the year it can vary). All this with temperature control at 18 ºC. It is then bottled directly from the fermentation vat without any clarification or earth filtration. VISUAL Ruby red color with a lower middle layer, with clearly visible traces of carbon dioxide that has been formed endogenously as a result of contact between the must and the “mother” (stemmed and crushed grapes). OLFACTIVE Fine yeast aromas mixed with fruity touches that grow over time. TASTE Full on the palate and sparkling, with a finish reminiscent of bitter almonds. PAIRING It has a wide range of possibilities when it comes to appetizers, cheeses, salads, oily fish and rice dishes are excellent, to which meats and stews must be added.
